Zucchini and bacon fritters


The “fritter” thing is pretty handy with Banting food – eggs are always good, and throw in whatever veggies and tasty ingredients you want – fry lightly in olive oil and voila! delicious! So this is what I did for this round …

 

2 beaten eggs

2 grated zucchini

2 rashers of bacon

2 tablespoons of almond flour (I use gluten-free flour as an alternative when making for my kids)

a handful of mozzarella

a handful of parmesan

 

Mix it all up in a bowl until the consistency looks about right for a fritter (more flour, if necessary). Then heat some olive oil in a pan (I used the same pan as I’d used to fry the bacon – adds to the taste) and drop a few spoonfuls into the pan and fry lightly. Yummy – even the kids thought so!
