1 cup nut butter ( I used unsweetened peanut butter)
1 cup xylitol
A grind of Himalayan salt
1 teaspoon vanilla paste/essence
Mix all ingredients with a stick blender until smooth. Roll into a log and wrap in cling wrap or wax paper. Leave in the fridge for 30 mins. Take the log out and unwrap.
Slice rounds of the log and place them on a cookie tray. Bake at 180 for 10 minutes.
Take them out of the oven and leave them to cool. Don’t lift them off the tray until totally cool, otherwise they will crumble. Come back in a few hours and pack away so you don’t eat too many These are yummy and nutritious.
