Cinnamon muffins


Mix the following dry ingredients together:

1 cup flaxseed powder/meal
1 cup almond flour
1/4 cup xylitol or erythritol
1 teaspoon cinnamon
1 grind of salt
1 teaspoon baking powder

 

Mix wet ingredients:

3 beaten eggs
2 tablespoons melted coconut oil

Mix wet and dry together. Bake at 180 for 30 minutes or until done.

While they are baking, make this glaze:
2 tablespoons butter
1 teaspoon cinnamon
1 tablespoon xylitol or erythitol

When the muffins come out the oven, make a cross with a knife in the middle of each one and pour over the glaze.
Let them cool slightly … if you can. They are soooo yummy!
