Bacon and cheese #lunchbox muffins

I’m always searching for delicious, nutritious and edible treats for lunchboxes. This one works well for us because we love bacon … so mixing it with cheese in this muffin is the best protein boost in the middle of the morning.


Mix 150g Almond Flour

1 teaspoon baking powder

1/2 teaspoon bicarb

half a cup of finely grated cheese

bacon (fried), lots of bacon (I used 8 rashers of Richard Bosman streaky bacon)


In another bowl, mix well:

2 eggs

2 tablespoons olive oil (or coconut oil if you prefer)

4 tablespoons natural yoghurt


Mix wet into dry (do not overmix), put into muffin pans and bake for 20 minutes at 180.


Cool and pop into tomorrow’s lunchbox.
