Perfect Sunday afternoon. Steak on the braai, kale chips from Earthshine and fresh salad. And the prospect of Spring tomorrow, 1st September. A time of fresh jasmine scent, newly turned soil, sea breeze, and warm sun on my back.

The “fritter” thing is pretty handy with Banting food – eggs are always good, and throw in whatever veggies and tasty ingredients you want – fry lightly in olive oil and voila! delicious! So this is what I did for this round …   2 beaten eggs 2 grated zucchini 2 rashers of bacon 2 tablespoons of almond flour (I use gluten-free flour as an alternative when making for my kids) a handful of mozzarella a handful of parmesan   Mix it all up in a bowl until the consistency looks about right for a fritter (more flour, if necessary).
