Dinner


Wrap individual pieces of chicken (thighs and legs) each in a strip of streaky bacon. Place into a large roasting pan and cover with a cup of cream. Season well with salt and pepper. Sprinkle turmeric over the chicken and cream. Roast for 45 mins at 180. Serve over salad leaves, or zucchini noodles.  

Creamy turmeric chicken


Easy an delicious meatballs with a super healthy twist – they’ve got linseeds, pecan nut flour and seed crackers (oh, and eggs!), so all round good for you. Seed and nut meatballs


Fry 500g beef mince til browned. Add a can of tomatoes, two teaspoons of mixed herbs and oreganum, one grated carrot and 3 zucchinis. Let simmer for 5 minutes. Slice 4 or 5 zucchinis very thinly. Then layer the lasagne – first the mince, then the zucchini (used instead of lasagne sheets), then pour over some cream and top with grated cheese (cheddar, parmesan). Start again with the mince, zucchini, cream and cheese. Bake for 30 minutes at 180 until cheese is crispy.

Banting lasagne



Perfect Sunday afternoon. Steak on the braai, kale chips from Earthshine and fresh salad. And the prospect of Spring tomorrow, 1st September. A time of fresh jasmine scent, newly turned soil, sea breeze, and warm sun on my back.

Steak, kale and salad


Fry a pack of 500g minced beef in a little olive oil. Add carrots and zucchini (3 of each, steamed and pureed), and a can of tomatoes. Steam a head of cauliflower til cooked. Add half a cup of cream and puree. While the cauliflower is still hot add a cup of cheddar, a cup of mozzarella and half a cup of parmesan cheese. Sprinkle tumeric, salt and pepper over the top. Bake for 30 minutes until cheese nice and melted.      

3 cheese shepherd’s pie


Bake 8 chicken pieces, wrapped in bacon, for 30 minutes in a cup of cream, with a teaspoon of tarragon and salt and pepper.   Make zucchini noodles (either using a grater, or a spirelli … this was my first real try of a new spirelli!). Pop them into the microwave with just 1 tablespoon of water, for 1-2 minutes. When they are soft, top with blue cheese and the cream from the chicken, and then add chicken on top.
