This is a great mid-morning or mid-afternoon “snack” that’s healthy – and tasty. My kids have these often – and there’s always a call for “more”. Smoothie “snack”

1 cup of each of the following; Sunflower seeds Linseeds Sesame seeds Coconut (flakes or dessicated) Chopped almonds Cup of frozen blueberries Half cup of psyllium husks Half cup of coconut oil (warmed, so it’s liquid) Xylitol or stevia to taste (I used 2 tblsp) Mix together and bake in the oven at 200 Celsius for half an hour (longer if you like it crunchy, but don’t let it burn)
