  CARROT MANGO COCONUT 1 large carrot (grated), 1 cup frozen mango, 1-2 tablespoons unsweetened shredded coconut. Blend with 1/2 to 1 cup liquid. Mix the following dry ingredients together: 1 cup flaxseed powder/meal 1 cup almond flour 1/4 cup xylitol or erythritol 1 teaspoon cinnamon 1 grind of salt 1 teaspoon baking powder   Mix wet ingredients: 3 beaten eggs 2 tablespoons melted coconut oil Mix wet and dry together. I do like a good rusk on a sleepy Saturday morning when I’m sipping coffee and watching the world wake up.  Try these banting rusks if you’re having a craving. They’re softer than the usual crispy ones – but perhaps if you leave them in the oven a little longer, they’ll crisp up some more.   RECIPE Melt and cool 500g butter Add 500ml buttermilk Mix 5 cups almond flour, 1 cup coconut flour, 40ml baking powder, pinch of salt, 1 cup xylitol, 1 cup sunflower seeds, 1 cup linseeds (can substitute other seeds if you prefer). Breakfast charcuterie

Mix 100g butter (softened) with 3/4 cup xylitol, using a hand blender. Add 2 eggs and whisk until light and fluffy (1 minute). Add 3 mashed bananas slowly (beating after each banana). Then add 1 cup almond flour, 1 tsp baking powder, 1 tsp vanilla extract, 1 twist of himalayan salt. Beat with electric beater until all well mixed. Spoon into moulds and bake at 200 for 20 minutes. Deeeelicious!      

Banana muffins


When I’m not munching on double cream yoghurt and grain-free granola, then this hot breakfast does it for me. Boiled egg on avo, with a sprinkling of salt and pepper. Too delicious on a cold, wintry morning.
